Vinification Fermentation with naturally-occurring yeasts. Separate vinification of the two varieties in stainless steel vats with temperature control (18˚). Ageing on lees. Conservation in stainless steel and coupage during bottling.

No clarifying, filtering or corrections of the wine at any point in the process.
