Vinification  Fermentation with naturally-occurring yeasts in stainless steel vats with temperature control (19˚). Ageing on lees. Conservation in stainless steel and bottled in February. No sulphites added in conservation. No clarifying, filtering or corrections of the wine at any point in the process.
